Chocolate Peanut Butter Cookies
Ingredients:
1 c. butter
1 1/2 c. sugar
2 eggs
2 tsp. vanilla
2 c. flour
2/3 c. cocoa powder
3/4 tsp. baking soda
1/2 tsp. salt
3 c. peanut butter chips
Chocolate sprinkles
Preheat oven to 350 F.
In a medium bowl, cream together butter and sugar.
Add in eggs and vanilla. Mix until combined.
Add in flour, cocoa, baking soda, and salt. Mix well.
Fold in 2 c. peanut butter chips.
Shape into 4.5 oz. balls and place on baking sheet. I usually put three to a sheet, but it depends on the size of your sheet, obviously. Press down lightly.
Bake for 15 minutes.
Place baking sheet on cooling rack and cool for 15 minutes.
Transfer cookies directly to cooling rack and cool for an additional 15 minutes.
Melt 1 c. peanut butter chips and spread over 1/2 of each cookie (see picture). Top with chocolate sprinkles.
