Corn Meat Pie

Kinda like meat loaf....kinda not. My family loves it, though.

Ingredients:

  • 1 c. bread crumbs
  • 1/2 c. milk
  • 1 lb. ground beef (preferably lean)
  • 1 egg
  • 2 Tbsp. minced onion
  • 1 tsp. salt
  • 1 Tbsp. Worcestershire sauce
  • 3 Tbsp. ketchup
  • 1 can corn, drained
  • salt and pepper, to taste
  • mozzarella cheese, as desired

Preheat oven to 350* F. Grease a two-quart baking dish.

In a large bowl, combine bread crumbs and milk. Then add hamburger, egg, onion, salt, Worcestershire sauce, and ketchup. Mix well (I usually mix this with my clean(!) hands. I'm old school like that). Line your baking dish with the meat mixture, making a "crust." You should have a well in the middle. Bake for 40 minutes. Remove from oven.

Pour can of corn into a sauce pan. Add salt and pepper to taste and cook over medium-low heat just until warm.

Pour seasoned corn in the meat crust. Top with mozzarella cheese and return to oven for 15 minutes. Serve hot.
