Linguine & Pesto

Ingredients:

  • 16 oz. linguine
  • 2 c. spinach
  • 1 c. fresh basil
  • 1/2 c. pine nuts
  • 1/4 c. parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 c. olive oil
  • 2 Tbsp. lemon juice
  • salt and pepper
  • additional parmesan, if desired
  • cherry tomatoes, if desired

Prepare linguine according to package directions. Set aside.

While linguine is cooking, put all other ingredients in food processor.

Transfer linguine to a bowl. Add pesto and mix until all pasta is coated.

Serve with additional parmesan and cherry tomatoes, if desired.
