Pumpkin Pecan Lava Cake

Ingredients:

  • 1 c. plus 3 Tbsp. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/4 c. sugar, divided
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 1/2 c. pumpkin puree
  • 1/4 c. milk
  • 1/4 c. butter, melted
  • 1 1/2 tsp. vanilla
  • 1/2 c. brown sugar
  • 1/2 c. chopped pecans, divided
  • 1 1/2 c. water

1. Preheat oven to 350. Grease an 8x8" baking pan.
2. In a medium bowl, whisk together flour, baking powder, salt, 3/4 c. sugar, cinnamon, nutmeg, and cloves.
3. In a small bowl, whisk together pumpkin, milk, butter, and vanilla. Pour into dry ingredients and mix to create a batter. Batter will be thick. Spread in pan.
4. In small bowl, mix 1/2 c. sugar, brown sugar, and 1/4 c. pecans. Sprinkle entire mixture over batter.
5. Pour hot water over entire dish - DO NOT STIR.
6. Bake for 40-50 minutes - until toothpick inserted only in center of dough portion comes out clean.
7. Allow to cool for 10-20 minutes. Serve warm with ice cream.
