Roasted Red Pepper Pasta
Ingredients:
- 16-24 oz. of your preferred pasta, cooked
- 6 cloves garlic, minced
- 1 onion, chopped
- 4 Tbsp. butter (1/2 stick)
- 16 oz. heavy cream
- 8 oz. cream cheese
- 1 c. Parmesan cheese
- 2 12 oz. jars roasted red peppers
- additional Parmesan and basil, if desired.
Prepare pasta according to package directions.
Puree peppers in food processor and set aside.
Melt butter in large skillet. Saute onion until translucent. Add in garlic and saute for another minute or two.
Add in heavy cream. Stir until well mixed.
Add in cream cheese and Parmesan cheese. Stir until cream cheese is melted.
Stir in pureed peppers. Cook until warm.
Place pasta on a plate and top with warm sauce. Add additional Parmesan and fresh basil, if desired.
