Sheet Pan Blueberry Pancakes

Fair warning - this is not my favorite blueberry pancake recipe. Not by a long shot. But it is my favorite blueberry pancake recipe for mornings where I have 10 people wanting pancakes. Someday, I'll share my favorite pancake recipe, but for today, here's an easy (and cheap!) way to make blueberry pancakes for your entire hungry family without standing over a griddle for an hour.

Ingredients:

  • 3 c. flour
  • 2 Tbsp. baking powder
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 2 1/2 c. milk
  • 2 large eggs
  • 1 stick (1/2 c.) of butter, melted
  • 1 1/2 c. blueberries

Preheat oven to 425* F. Grease a 18 x 13" sheet pan.

Whisk together dry ingredients. Add in wet ingredients and mix just until combined. Stir in blueberries.

Pour into sheet pan and bake for 15 minutes. Serve while hot topped with additional butter, syrup, whipped cream, and fruit.
