Summer Pasta Primavera

Ingredients:

  • 16 oz. rotini pasta
  • 1 Tbsp. olive oil
  • 1 clove garlic, minced
  • 1 c. broccoli florets, chopped
  • 2 carrots, sliced
  • 1/2 bell pepper, chopped
  • 1/2 onion, chopped,
  • 1 zucchini, sliced
  • 1/2 c. tomatoes, chopped
  • 1 tsp. oregano
  • 1 Tbsp. fresh basil, chopped
  • 2 Tbsp. butter
  • 1 c. Parmesan cheese
  • pepper
  • salt

Prepare rotini according to package directions. Drain and set aside.

In a large skillet, heat oil over medium heat. When hot, add garlic. Cook for 15-30 seconds.

Add broccoli, carrots, bell pepper, and onion. Stir fry for about three minutes.

Add zucchini. Cook for another two minutes.

Add tomatoes, oregano, and basil. Cook for another two minutes.

Add cooked pasta and butter. Then add Parmesan cheese. Mix well.

Season with salt and pepper to taste.

Serve warm.
