Beet & Goat Cheese Salad

Ingredients:

  • arugula
  • spinach
  • beets, cooked and chopped
  • oranges
  • goat cheese
  • walnuts
  • oil
  • balsamic vinegar
  • salt and pepper, to taste

Make bed of arugula and spinach on plate. Top salad with chopped beets, oranges, and goat cheese in amounts to your liking. In a separate small container, mix oil and vinegar in a 1:1 ratio. Add salt and pepper to vinegar and oil and mix well. Drizzle dressing over salad. Then top with walnuts.
