Chicken Fajitas
Ingredients:
- 2 lb. chicken breasts, cut into strips
- 1 onion
- 2 tbsp. lime juice, divided
- 3 bell peppers (I recommend using multiple colors)
- 3 tbsp. vegetable oil, divided
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. pepper
- 1/2 tsp. onion powder
- 4-6 flour tortillas
Slice onions and peppers into slivers.
In a small bowl, combine 1 tbsp. lime juice, 1 tbsp. oil, chili powder, cumin, pepper, and onion powder. Mix well, then add chicken strips and mix again.
Add a tablespoon of oil to a skillet and heat over medium heat. When skillet is hot, add half the chicken and saute until done (5-6 minutes). Remove first half of chicken and set aside.
Add an additional tablespoon of oil to the pan and saute the rest of the chicken (again, about 5-6 minutes). When done, set chicken aside.
If necessary, add a little more oil to the pan and saute onions and peppers until tender. When done, add chicken back to skillet and combine.
Heat tortillas in microwave, top with chicken and veggies, and serve! You can also top with cheese, lettuce, tomato, guacamole, sour cream and/or salsa.
