Spanish Rice

Ingredients:

  • 4 tbsp. butter
  • 1 1/2 c. long grain white rice
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 4 garlic cloves, minced
  • 14.5 oz. can diced tomatoes, undrained
  • 8 oz. tomato sauce
  • 4 c. chicken broth
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. chili powder
  • 1 tsp. paprika

Melt butter in large cast iron skillet over medium heat.

Add rice, onion, and green pepper. Saute until veggies are tender and rice is a bit browned.

Add garlic and continue to saute for about 30 seconds to a minute.

Add in tomatoes, tomato sauce, chicken broth, and seasonings. Stir well.

Bring to a boil, cover, and then reduce to a simmer. Allow to simmer for 45 minutes to an hour, until liquid is absorbed and rice is cooked. Remove from heat.

Always allow rice to sit for 5-10 minutes before serving.
