Ingredients

  • 15 oz can pumpkin puree (not pie filling)
  • 10 oz can evaporated milk
  • 1 c. brown sugar
  • 3 eggs
  • 1 tbsp pumpkin pie spice
  • 1 box of yellow cake mix
  • 1 c. chopped pecans
  • 1 c. Heath baking bits
  • 1 c. melted butter (2 sticks)
  • vanilla ice cream, optional

Instructions

  1. Preheat oven to 350 F. Line a 9x13" pan with parchment paper (or grease the pan - I actually prefer both).
  2. In a large bowl, combine the pumpkin, milk, sugar, eggs, and pumpkin pie spice. Mix well and pour into pan.
  3. Sprinkle the cake mix on top. Use the entire box and DO NOT STIR.
  4. Sprinkle pecans and Heath bits on top.
  5. Pour melted butter evenly all over the cake.
  6. Bake for 45 minutes to an hour - mine took awhile to set. Watch your edges. If your edges are browning, it's done.
  7. Serve warm topped with vanilla ice cream.
