Vegetable Gazpacho
Ingredients:
- 48 oz. V-8 juice
- 2 cloves garlic, minced
- 2 Tbsp. lemon juice
- 2 Tbsp. white wine vinegar
- 2 Tbsp. Worcestershire sauce
- Salt and pepper, to taste
- 2 tomatoes, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 2 stalks celery, diced
- 1 cucumber, diced
Mix juice, garlic, lemon juice, vinegar, Worcestershire sauce, salt, and pepper in a large bowl. Mix.
Add chopped vegetables. Mix and season to taste.
Chill for six hours before serving.
