Garlic Mushroom Mac

Ingredients:

  • 1 lb. elbow macaroni
  • 2 12 oz. pkgs. sliced fresh mushrooms (or, if you forgot to order those - see the pic above - you can substitute 2 13.5 oz. cans of sliced mushrooms)
  • 1 stick of butter, divided
  • 6 cloves garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup shredded fresh Parmesan cheese

Cook pasta according to package directions. Drain well, reserving about 1/8 - 1/4 c. of pasta water for sauce.

Melt half the stick of butter in a large pot over medium-high heat. When the butter is melted, add the mushrooms. Cook for 5-7 minutes, stirring frequently.

Add the garlic, salt and pepper to the pot. Cook for another minute.

Reduce heat to medium-low. Add pasta, the rest of the butter, the pasta water and the parmesan cheese to the pot and stir well to coat.

Serve hot.
