Crockpot Ham and Bean Soup

Ingredients

  • 20 oz. pkg. Hurst's Hambeens Great Northern beans (I have used great northern and pinto and both turned out fine, but you do need to buy the Hambeens brand to have the ham seasoning)
  • 2 c. diced ham (or a meaty hambone if you have one in the freezer)
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2-3 tbsp. fresh thyme (or 2 tsp. dried thyme)
  • 1/4 tsp. pepper
  • 64 oz. chicken broth
  • salt, to taste

Instructions

  1. Rinse beans and place in crockpot. Set ham seasoning aside.
  2. Add ham, onions, carrots, celery, thyme, pepper, and chicken broth.
  3. Cook on high for six hours. Do not open lid!
  4. When done, add ham seasoning. You can also add salt, to taste. Stir well and serve.
